What's For Dinner Wednesdays - Cornbread Casserole

I love casseroles. One of the main things that I love about them so much is their good ole fashioned warmth and heaviness. This casserole is easy to prepare, but it does take several steps. Here's what you need:

1. Homemade chili (as in soup, not green chile for all you southwest folks)
2. Taco meat made from one pound of ground beef (I season mine with McCormick's seasoning)
3. Krusteaz corn bread mix (2 boxes) - you will need the ingredients required to make the batter
4. Shredded cheddar cheese
5. One can of Mexicorn

In a large glass baking dish, mix the chili and taco meat.
Top the meat mixture with shredded cheddar cheese.
Then prepare the batter for the corn bread. Add mexicorn to the prepared batter.
Tak about 2/3 pf the cornbread batter and pour on top of the meat mixture and shredded cheddar cheese.
Bake according to the directions for the cornbread. It will take longer than what the box says.
